Cauliflower falafel
Serves 4
- 1 cauliflower, cut into florets
- 1/2 onion
- 2 -3 cloves garlic, roughly chopped
- a large handful of coriander, roughly chopped
- a large handful of continental parsley, picked and roughly chopped
- 1 tsp ground cumin
- 3/4 cup semolina
- 4 tsp plain flour
- 5 tbsp water
- 1/2 tsp salt
- Vegetable oil for frying
Place cauliflower, onion, garlic and herbs in a food processor and blend until finely chopped, transfer into a large bowl and add remaining ingredients, stir to combine.
Heat one centimetre of oil into a frying pan over medium-high heat. Shape heaped tablespoons of the mixture into pucks and fry each side for 3-4 minutes until golden brown. Serve with cucumber and tomato salad, pickles and flatbread.
