Orecchiette with broccoli and chilli
200g orecchiette pasta
2 cloves garlic, finely chopped
5 tablespoons extra virgin olive oil
1/2 teaspoon dried chilli flakes
Grated parmesan, to serve
Cut broccoli into bite-sized pieces, cook in a pan of well seasoned boiling water until just tender, 1-2 minutes. Drain well and spread out on a tray in a single layer to cool and dry.
Put the pasta on to boil as per packet instructions. Two minutes before it is done heat a frying pan over medium heat, add garlic and oil. Fry until garlic start to colour. Add chilli, then the drained broccoli, season with salt and pepper. Saute briefly, then add a few tablespoons of the pasta water and the cooked pasta. Cook together for a minute or so, and serve with grated parmesan.
