Roasted cauliflower salad with oranges and lemons



1 cauliflower, cut into bite sized florets

2 tbsp vegetable oil

1/4 tsp salt

Freshly ground pepper

1/4 red onion, finely sliced

A large handful of salad leaves sliced, radicchio or other bitter leaves work well

Juice of one lemon

Juice of half a orange

A late handful of coriander, washed and picked



Heat oil in a large baking dish in a very hot oven until very hot. Add cauliflower to hot oil with salt and pepper and roast for 15-20 mins, or until it is starting to turn a rich brown.

One cooked put into a large bowl and mix gently with lemon and orange juice. Leave to cool.

 One cooled mix in the rest of the ingredients, taste for seasoning add more salt or lemon if needed. Serve immediately.
